my first wedding cake order

my cousin got married this past weekend and i made the wedding cake! it was a neapolitan cake with vanilla buttercream; she wanted the cake to look rustic and almost like "stucco". the cake was 16", 12", 8". i also made dog sugar cookies that looked identical to their dogs. congrats sean and nicole!

school wedding cake

i just graduated from culinary school and my "final" was to make a wedding cake. it was covered in fondant, decorated with a scroll piping in royal icing, and i made hydrangeas and calla lilies from gum paste

baby shower sheet cake

my other cousin is having a baby boy, Alexander. This was a half sheet chocolate cake with a german buttercream (pastry cream based buttercream). I decorated the cake based off the stroller off her baby shower invitation and found a cute quote about babies. This cake fed around 40-50 people.

christening cake

my new baby cousin had her christening a little bit ago, so I made the cake of course! this was a 12" vanilla cake with vanilla pastry cream and iced with vanilla buttercream. I made pink gum paste blossoms and a cross for a special touch! The cake was very light and fluffy; perfect for the summer time! This fed around 30 people.

dragster birthday cake

for a friends 11th birthday I was asked to have a dragster on the cake... so I decided to trace a picture of one in white chocolate and then paint it with food coloring, it turned out really well! the cake was a quarter sheet "zebra" cake with 7 minute frosting and covered in sprinkles!

baby shower tiered cake

This was my baby shower gift to my cousin, Mandy! The bottom tier was chocolate cake with vanilla pastry cream with chocolate frosting. The middle tier was a vanilla cake with a middle layer of cheese cake and iced with a white chocolate and cream cheese frosting. The top tier was a heaven and hell cake: angel food cake and devils food cake layered with peanut butter mousse and covered in chocolate ganache. I made royal icing buttons, booties, and babies in bonnets! It was gender neutral so I did pale yellow and sage green.

chocolate mousse birthday cake

this birthday cake was for a wonderful family. this was a 10" chocolate mousse cake covered in ganache. it was four layers of cake and a semi sweet chocolate mousse in between. it fed around 20 people; this is a very rich and decadent cake!

mini strawberry tarts

I didn't have mini tart pans so to make these fruit tarts, I found pot pie tins and made my tart shell that way. I made a sugar cookie like crust, brushed chocolate on the inside so it wouldn't get soggy. I put vanilla pastry cream and sliced strawberries in it and ended up topping them with a dollop of whipped cream and a sprig of mint

s'mores desserts

 blow. torch. happy.

So I just got a blow torch, and its ah-may-zing.
On the top left, I made s'mores cupcakes with a baked graham cracker disc and a mound of fluffy toasted marshmallow. On the bottom, this is a 6" chocolate cake with swiss meringue and graham cracker crumbs in between. I roughly iced the outside with the rest of the meringue and torched away! Anything s'mores is a winner in my book.

chocolate peanut butter cake

The birthday boy was a die heart fan of chocolate and peanut butter, so I went all out! This was a 10" dark chocolate cake with peanut butter frosting and peanut butter cups in between the layers. I topped it with chocolate ganache and let it drip down all pretty and what not... you could get around 2o servings.

cream puffs and lemon squares

This was a dessert platter of 18 lemon squares and 18 cream puffs. The lemon squares were simple and very delicious and the cream puffs were filled with vanilla pastry cream, half were dipped in ganache and the others dusted with powdered sugar.

dark chocolate coconut cake

My friend wanted a cake for Easter that incorporated dark chocolate and coconut. So this is a 9" dark chocolate cake with a marshmallow coconut filling, covered in a dark chocolate ganache and covered in toasted coconut.

neapolitan birthday cake

This was a 12" Neapolitan cake for a friends birthday. I iced it with vanilla buttercream and did fun scroll work in pink and orange all around the cake for the Spring time!

This cake can serve around 40 people (depending on the how big you cut the pieces)
